US Open and Olympic champion Murray acquired the property, situated near his home town of Dunblane, earlier this year.
He plans to turn the Victorian mansion into a 15 room five star hotel, set to open in spring 2014 in time for the Ryder Cup which is taking place at nearby Gleneagles.
The restaurant will be overseen by Albert Roux, who co-founded Britain’s first Michelin-starred restaurant, London’s The Garvoche, along with his brother Michel.
“It is a great pleasure to have received this commission and that our skills have been recognised to design what is going to be another great restaurant,” said Ian Smith, who heads the team at Ian Smith Design.
“The design is well under way and is being well received by all parties. It will be based on the principle I always work on in restaurant design – namely, the design must compliment the food, not detract from it, great food, great design”.
Cromlix House is the latest in a string of high-profile projects for the design company, which recently worked on The Honours restaurant and The Atholl Hotel, both in Edinburgh.
