Experimental Group has revealed plans to renovate Ibiza’s Gran Hotel Montesol, a historic property that opened in 1933 – as the first of its kind on the island – during an era marked by global industrialisation.

Following a complete transformation by French designer Dorothée Meilichzon, the property’s new restaurant, Sabbaba Montesol, will open at the end of this month and comprises 60 seats in the main restaurant, 90 covers on the terrace and 120 seats on the rooftop, with views overlooking Ibiza old town and the port.

The arrival of Sabbaba Montesol is the first stage in the journey and will be followed by the refurbishment of 33 rooms in 2022, breathing new life into the hotel while remaining true to its heritage as a UNESCO Property of Cultural Interest, officially listed as a Bien de Interés Cultural by the Spanish Ministry of Culture.

“We have been in Ibiza for years and love the island, so are delighted to be offering something new in the heart of the old town,” says founder Olivier Bon. “This is the first step in our renovation journey of this heritage hotel. In addition to our newly designed restaurant, we welcome the talented Tomer Amedi as our Head Chef. We cannot wait for guests to experience his new menu and selection of cocktails in the bar.”

Used by the Spanish government as a military barracks during the Spanish Civil War and World War II, Gran Hotel Montesol has played host to a number of high-profile figures since its opening, including Orson Wells and Princess Caroline of Monaco. Located just off the main strip of Paseo Vara de Rey, the hotel is a short distance from the historic Dalt Vila neighbourhood, listed as a UNESCO World Heritage Site since 1999.
